You’ll Need:

NOODLES 
  1. 200g/7 oz dried wide rice stick noodles , or 15 oz/450g crisp wide level rice noodles (Sen Yai) 
SAUCE 
  1. 2 tbsp dim soy sauce 
  2. 2 tbsp clam sauce 
  3. 2 tsp soy sauce (universally handy or light, 
  4. 2 tsp white vinegar (plain white vinegar) 
  5. 2 tsp sugar (any sort) 
  6. 2 tbsp water 
Pan fried food 
  1. 3 tbsp shelled nut or vegetable oil , isolated 
  2. 2 cloves garlic cloves, in all respects finely cleaved 
  3. 1 container/150g/5oz chicken thighs (boneless, skinless), cut  
  4. 1 substantial egg 
  5. 4 stems Chinese broccoli 

How to Make:

  1. Chinese Broccoli - trim finishes, cut into 7.5cm/3" pieces. Separate leaves from stems. Cut thick stems down the middle vertically so they're no more extensive than 0.8cm/0.3" thick. 
  2. Noodles - Get ready as indicated by bundle bearings and channel. Time it so they're cooked just before utilizing - don't leave cooked rice noodles lying around, they break in the wok.
