Fixings :
  • 2 lbs throw (fat cut off) (see note 1) 
  • 2 1/2 lbs tomatoes (whitened, skin evacuated and generally diced) 
  • 1 onion (medium, diced) 
  • 3 celery stalks (cut around 3/8" thick) 
  • 1 red ringer pepper (diced) 
  • 2 tsp cumin powder 
  • 3 Tbsp Ancho chile powder (see note 2) 
  • 2 Tbsp olive oil 
  • 1 tsp dark pepper 
  • 2 tsp salt (in addition to additional to taste) 
  • 1 glass water 



Guidelines :
  1. Set the broiler to sear (high) and let it pre-heat while you are setting up the meat. Crush the meat on a medium size plate. Structure around 8 patties, place on a foil lined preparing plate and sear it on high, around 4 inches from the warming component, for around 3 minutes for each side. Expel from the stove and put aside. Utilizing a fork, disintegrate meat patties into ¼ to ⅜ inch lumps.
